              Instead of oil, we use a light spray of "Pam" all-natural cooking spray to saute and to coat our pans, but when oil is a must  (i.e. for cooking the tortillas for the enchiladas), we use the very minimum (i.e. no more than 1/2 teaspoon per enchilada) and only use ORGANIC high oleic/high heat sunflower oil (100% expeller pressed NATURALLY refined) or Extra Virgin Olive Oil.  Nothing is deep fried.  Instead of butter or margarine: natural 100% vegan non-hydrogenated non-GMO expeller-pressed oils buttery spread with 0% cholesterol and no trans fats.  (a.k.a. "Earth Balance" Spread)

I have developed ways to make the  dishes "mom used to make" healthier, lower in fat, higher in fiber, lower in sodium and tastier!  For example, to make a "white" sauce base (i.e. for the Chicken Pot Pie), l use organic whole wheat pastry flour (instead of white flour), organic skim milk (instead of regular milk or cream), & organic fat-free chicken broth (instead of regular broth).
